Hi Karen,

I checked my Morrison's Kitchen Manual. No, the chops weren't marinated. They were, however, lightly dusted with "paprika flour" and stuffed with precooked dressing. Here's the recipe:

Morrison's Stuffed Pork Chops

Stuffed Chops
Cooked Dressing*
Paprika Flour**
Salt Pepper
Oil

Place cooked dressing* in pocket of chops and press outside edges together.

Season paprika flour with salt and pepper. Sprinkle pork chops with
paprika flour**.

Sprinkle with oil and bake in a 350° oven.

Paprika flour is 10 parts flour to 1 part paprika.

*Cooked celery dressing: Cooked celery dressing
**Paprika Flour is 10 parts flour to 1 part ground paprika
The dressing they used was their "celery dressing": 01-02-2017

A friend mentioned it the other night.  She said they marinated them in 
orange juice (at the very least).  And the stuffing was similar to what you 
stuff turkeys with (but she couldn't swear to sage being in it).  
I know I did some major searching with no luck.  Thanks!!!

I checked with an acquaintance of mine who was a Morrison's Cafeteria manager in the years before they closed. He said there is no marinade mentioned in his copy of the Morrison's Kitchen Manual recipe for stuffed pork chops, either. However, managers at individual Morrison's Cafeterias were allowed leeway to vary from the Kitchen manual recipes somewhat. Such variation was allowed on a dish at that particular location, but it would not be company-wide and therefore the recipe in the manual would have been the official company recipe.
